Description

An easy spinach lasagna with a homemade meat sauce, fresh spinach, bow-tie noodles and sour cream instead of ricotta! A great twist on the traditional favorite.

Ingredients

  • 1 pound Ground Beef
  • 1 pound Ground Pork
  • 1  Large Yellow Onion
  • 4 cloves Garlic
  • 15 ounces, weight Tomato Sauce
  • 6 ounces, weight Tomato Paste
  • ½ teaspoons Rosemary
  • ½ teaspoons Basil
  • ¼ teaspoons Marjoram
  • ¼ teaspoons Oregano
  • ¼ teaspoons Black Pepper
  • 1-½ teaspoon Salt
  • 1 cup Red Wine
  • ½ cups Water
  • 1 package Bow Tie Noodles, 16 Ounce Package
  • 1 bag Fresh Spinach (12 Oz)
  • 2 cups Sour Cream
  • 2 cups Parmesan Cheese, Grated

Preparation

Chop your onions and garlic. Add them to the ground beef and pork and brown the mixture in a large pan on the stove over medium heat. Once the meat is browned and fully cooked, drain off the excess fat. Add the tomato sauce, paste and spices to the meat and onions and stir. Next add the wine and water.

Let the sauce simmer while you boil your bow-tie noodles (cook according to package instructions). Drain the noodles from their water once they are cooked and add them to your pasta sauce. Stir until the noodles are fully covered with the sauce.

Next take a large 9×13 baking dish and place 1/2 of your noodle mixture on the bottom, cover the noodles with half of the fresh spinach, then 1 Cup of sour cream (spread as evenly as possible), and finally 1 cup of the parmesan cheese. Then repeat the layers again, with the other 1/2 of the pasta, spinach, sour cream, and parmesan.

You can cook this immediately, or refrigerate until you’re ready to warm up the lasagna and serve. Bake at 350F for 30-45 minutes – the time will vary depending on if you’ve refrigerated the casserole or not.
