Description

The best mac n’ cheese around. KD hasn’t got a leg to stand on with this stuff!

Ingredients

  • 2 cups Elbow Noodles
  • ¼ cups Butter
  • 1 whole Medium Onion, Chopped
  • 2 cups Warm Milk
  • ¼ cups Flour
  • 3 cups Extra Old Cheddar Cheese
  • ¼ cups Parmesan Cheese
  • Salt And Pepper, to taste

Preparation

In a large pot, boil elbow noodles until they are just about fully cooked. Remove from heat, drain and return to pot. Set aside.

In a saucepan over medium heat, melt butter. Add onion and cook until onion is transparent, approximately 4 minutes. Warm milk in microwave, just enough to take the chill off. Add milk to saucepan, whisk in flour, and heat until mixture thickens. Add cheddar and Parmesan cheeses. Stir until cheeses have fully melted. Add salt and pepper to taste.

Add cheese mixture to partially cooked noddles and combine fully. Pour mac n’ cheese into an oven-safe baking dish and bake at 350ºF for 15-20 minutes, or until noodles are fully cooked. Leave the lid off the dish to crisp the top if you like!

Alternatively, you can fully cook the noodles and just add the cheese sauce and enjoy right away!
