Easy to assemble and kid-friendly!
Mix soy sauce, lime juice, honey, and ginger. Marinate chicken in the soy sauce mixture 1-2 hours, turning once or twice.
Place chicken, skin side up, in shallow pan. Bake at 375ºF for 50 minutes. Raise heat to 425ºF and bake 10 minutes. Sprinkle with sesame seeds and serve with rice.
Note: Don’t substitute boneless, skinless chicken breasts; this recipe really needs the dark meat! Also, I usually line my pan with foil to make clean-up easier.
