And easy and healthy dinner!

Ingredients

  • FOR THE MARINADE:
  • 2 Tablespoons Olive Oil
  • 1 clove Garlic, Minced
  • ½ teaspoons Freshly Grated Ginger
  • ½ Tablespoons Lime Zest
  • 1 Tablespoon Lime Juice
  • 1 Tablespoon Soy Sauce
  • _____
  • FOR THE DISH:
  • 1 pound Raw Or Fresh Peeled And Deveined Shrimp
  • 1 Tablespoon Olive Oil
  • ½ whole Red Pepper, Chopped
  • 1 cup Sliced Mushrooms
  • 1 clove Garlic, Minced
  • ½ pounds Whole Wheat Pasta Of Choice (I Used Capellini)
  • 1 cup Sugar Snap Peas
  • 1 Tablespoon Soy Sauce
  • Salt And Pepper, to taste
  • 2 Tablespoons Peanuts, Crushed

Preparation

Combine marinade ingredients in a dish and whisk together. Add to a ziplock bag along with the shrimp and marinate for 2 to 24 hours.

Once ready to cook, heat a skillet on medium heat and add olive oil. Add peppers and mushrooms to the pan and saute until soft, about 6-8 minutes. Bring pasta water to a boil and cook according to package directions, draining and setting aside until later. Add garlic to the peppers and mushrooms and stir for 30 seconds. Add shrimp to the pan and cook on each side for about 2-3 minutes. Add snap peas, soy sauce and pasta, thoroughly stirring until everything is mixed. Season with salt and pepper if desired and serve garnished with crushed peanuts.

I really liked this! I just dumped all the marinade in with the shrimp and veggies, which was good because I think the flavor would have been slightly lacking otherwise. I also used soba noodles. Next time I would use more ginger and lime and add some nappa cabbage to the veggie mixture.

I just made this for dinner and it was fantastic! I wasn’t sure what to do with the marinade so I cooked it with the noodles and they had so much flavor. It made me wish Spring would hurry up and get here as it was really just a light meal with a lot of flavor. This is in my will make again book. Thank you Jessica for sharing this wonderful recipe with the rest of us.

This was excellent. The crushed peanuts on top made it for me!! The recipe did not specify to drain the marinade or not—I drained about half of it off, and cooked the rest with the shrimp. I think that really added to the flavor.
