Description

Chickpeas and vegetable broth are pureed to create the sauce for this unique pasta dish.

Ingredients

  • 1 pound Shell Pasta
  • 1 Tablespoon Olive Oil
  • 2 cloves Garlic, Minced
  • 15-½ ounces, weight Can Chickpeas
  • 14 ounces, fluid Can Vegetable Broth
  • 2 whole Tomatoes, Chopped
  • ¼ cups Fresh Parsley, Chopped
  • Salt And Pepper
  • 2 Tablespoons Fresh Grated Parmesan Cheese
  • 4 whole Lemon Wedges

Preparation

Cook pasta in boiling water for 9 minutes, or until al dente. While pasta is cooking, heat oil in a medium saucepan over medium heat. Add garlic, saute 1 minute. Drain and rinse chickpeas in a colander, then add to the pan. Add vegetable broth and stir. Let this mixture come to a boil and reduce heat to low. Simmer for 10–12 minutes.

Place chickpea mixture in a food processor or blender. Process until smooth. Pour sauce over pasta in a large bowl or pot. Toss with tomatoes and parsley. Season with salt and pepper.

Over each individual serving, grate 2 teaspoons Parmesan cheese and squeeze a lemon wedge. Serve immediately.
