Super easy to make and was delicious! I skipped the mixing of ingredients in the bowl and just tossed them all together in the pan, using my hands to get it all well coated with the olive oil and spices. I was worried that the potatoes wouldn’t be soft enough after only 30 minutes, but they turned out perfectly!

This was easy to make, delicious, and reasonably healthy! It is even better the next day, as the flavors meld together more. I used a a bit of ground mustard in addition to the other spices, and it gave it a nice flavor. The potatoes didn’t quite seem to get done, but I blame it on baking in altitude and having to modify times and temps. My hubby also gave it a thumbs up, and we’ll be making it again!
