Description

My family loves rice, shrimp and sausage and this recipe delivers on all fronts with a fantastic not too mild, not too hot flavor that makes everyone come back for seconds!

Ingredients

  • ⅓ cups Vegetable Oil
  • 1 whole Onion, Chopped
  • 3 whole Garlic Cloves, Chopped
  • 2 whole Celery Ribs, Chopped
  • 1 whole Green Bell Pepper, Chopped
  • 2 pounds Shrimp, Peeled And Cleaned
  • 1 pound Smoked Sausage, Cubed
  • 2 cups Uncooked Rice
  • 2 cups Chicken Broth
  • 1 cup Diced Tomatoes
  • 1 teaspoon Cayenne Pepper
  • ½ teaspoons Crushed, Dried Thyme
  • 1 whole Bay Leaf
  • Salt To Taste
  • 1 Tablespoon Fresh Parsley, Chopped

Preparation

Heat oil in a large saucepan.

Saute onion, garlic, celery and green pepper over medium-high heat about 5 minutes or until vegetables are tender.

Add shrimp and sausage; cook for 10 minutes.

Add rice, broth, tomatoes with liquid, cayenne, thyme, bay leaf, and salt. Cover pan and bring liquids to a boil.

Reduce heat until liquids are simmering; cook covered about 30-40 minutes or until liquid is absorbed and rice is tender.

About 5 minutes before dish is done, stir in parsley.

TexasPiglets: that shouldn’t warrent a bad review. That was a fail on your part. You always have to be careful with the hot spices.

We tripled the recipe since we have a large family. I think the 3tsp of cayenne pepper killed it. It was so hot only 3 of the 8 of us ate it. Definitely if you need to make more than 1 recipe, hold off on the cayenne. We eat spicy all the time, but this ruined the pot. Our mistake.

This is in my regular meal rotation. It’s so so good! My husband is keto now and I just replace the rice with cauliflower rice and adjust cooking time a bit.

Hmm, I left a comment, maybe it should be a review instead. We tripled it since we have a large family, but the cayenne pepper was overwhelming. Don’t triple the cayenne pepper! We eat spicy all the time, but this killed us. :(

I’ve made this several times! Love this! Best Jambalaya I’ve ever had… granted I’ve never been to Nawlin’s…. but I’m sure it’s the best outside it! :-)

This turned out delicious. Great technique. I added 1 lb diced chicken breasts and reduced the shrimp. I did find I needed more liquid because I used brown rice. Also added some cajun spice mix I had on hand. It dubled easily and I cooked it in a cast iron dutch oven rather than a sauce pan.
