Description

Make summer last a little longer (or come early in December!) with these light and flavorful tacos that you can whip up in under 20 minutes!

Ingredients

  • 1 ear Fresh Corn
  • 1 teaspoon Chili Powder
  • 1 whole Lime, Juiced
  • ½ cups Chopped Purple Onion
  • 1 whole Tomato
  • ¼ cups Chopped Fresh Cilantro
  • 1 whole Jalapeno, Seeded And Minced
  • Oil, To Cook Fish
  • 6 whole Fillets Of White Fish (Cod Or Tilapia Work Best)
  • Salt And Pepper, to taste
  • 8 whole Tortillas

Preparation

Slice corn off the cob. In a bowl, combine corn, lime juice, purple onino, tomato, cilantro and jalapeno. Sprinkle a bit of salt and pepper on top to get the flavors to come out a little.

In a hot skillet, drizzle a bit of oil. Place fish into skillet and season with salt, pepper, and chili powder. “Fry” on each side for 2-5 minutes, depending on how thick your fillets are. Fish is done when it flakes upon being gently pricked with a fork.

Roughly chop cooked fish. Add fish to a warmed tortilla and top it with the corn salsa. Serve and enjoy!

My husband made these last night, exactly per the recipe. Very easy and so incredibly tasty! Everybody loved them and we had no leftovers. We’re definitely adding this recipe to our regular summer line-up.

Ohmygoodness! This was SOOO good!

We did make two changes – no jalapeno, and I used a sweet onion rather than purple onion in the salsa.

However, my 6 year old declared this the best fish tacos ever, and my husband took a bite and his eyes just about rolled back in his head!

Can’t wait to make these again!
