Description

An authentic Cajun recipe. A simple and easy way to use fish.

Ingredients

  • 1 stick Butter
  • 1 whole Medium Onion
  • 2 stalks Celery
  • 1 whole Medium Green Bell Pepper
  • 1 Tablespoon Cajun Seasonings
  • 1-½ pound Mild, White Fish
  • 1 can (large) Diced Tomatoes, Or Whole Tomatoes Cut Into Chuncks

Preparation

Place stick of butter in baking dish. Place in oven and preheat oven to 350 degrees.

While the oven in preheating, finely chop the onion, celery, and bell pepper.

As soon as the even has reached 350 degrees, remove the dish. The butter should be completely melted.

Sprinkle the Cajun seasonings on top of the butter. Place the fish in the dish in an even layer.

Once all the fish have been place in the dish, flip them over so the top layer is coated with the butter and seasonings.

Spread the chopped veggies over the top. Pour the tomatoes over the veggies in an even layer.

Cover with foil and place back in the oven. Bake for 1 1/2 hours. Serve over rice.

We tried this tonight. It was wonderful! My husband said he felt like he was eating out in a fancy place. Excellent flavors and not too spicy. Perfect!
