Description

Fresh and vibrant, this pasta dish is easy and fast to make.

Ingredients

  • ¼ cups Extra Virgin Olive Oil
  • 1  Small Onion, Finely Sliced
  • ¼ pounds Bacon, Chopped
  • 1-½ Tablespoon White Wine Vinegar
  • 1-½ Tablespoon White Wine
  • 1 can (14 1/2 Oz. Size) Whole Tomatoes, Crushed
  • 1 pinch Salt
  • 1 pinch Pepper
  • 10 ounces, weight Fettuccine
  • 1 cup Freshly Grated Parmigiano Cheese, Divided

Preparation

Heat the oil in a skillet then add the onion. Saute until soft, about 10 minutes. Add the bacon and cook for another 10 minutes.

Add the vinegar, wine, crushed tomatoes, salt and pepper. Mix and let simmer for about 25 minutes.

When there is 10 minutes left. boil a pot of water and cook the pasta. Drain and mix the pasta gently into the tomato mixture, Add 3 tablespoons of grated Parmigiano and mix through.

Serve in pasta bowls topped with more grated cheese.

This was easy, delicious and very complimentary to small adjustments. I didn’t have any white wine, so substituted chicken broth and I don’t think it took away from the richness of flavor. I also added a little fresh basil as our garden is full of it – amazing. Thanks for sharing!
