Description

Such a fun and easy supper idea. And it’s baked – not fried! Tastes delicious – great for all ages.

Ingredients

  • 3 cups Cooked Chicken, Chopped (canned Chicken Works Great To Cup The Prep Time In Half)
  • ½ cups Onion, Chopped
  • ½ whole Lime, Juiced
  • ¾ cups Thick And Chunky Salsa
  • 1 whole Garlic Clove, Pressed
  • 12 ounces, weight Refried Beans
  • 4 whole Burrito Sized Flour Tortillas (11-11 1/2 Inches)
  • 1-½ cup Colby Jack Cheese
  • 2 whole Tomatoes Thinly Sliced
  • Optional Garnishes: Sour Cream, Lettuce, Avocados

Preparation

Preheat oven to 425F.

In a medium sized microwaveable bowl mix chicken, onion, lime juice, salsa and garlic together. Microwave this mixture for about 3 minutes.

Start heating the beans in a small sauce pan over medium heat.

Arrange tortillas in the shape of a plus sign (just overlap them in the center, placing one at 12 o’clock, one at 3 o’clock, one at 6 o’clock and one at 9 o’clock) on a rimmed baking sheet. So you’ll basically have one giant tortilla, in the shape of a plus sign. (If you would like to see a picture click on the related link for step by step pictures.) Be sure to overlap them in the center!

Take your chicken mixture out of the microwave and mix in about a 1/2 cup cheese. Spread your hot beans over the center of the tortillas (where they overlap). Then spread your chicken mixture over that. Now close up your burrito starting with the first tortilla on the left (fold it in over the filling) and then fold each of the other tortillas over the filling, working clockwise. Now top the monster burrito with your sliced tomatoes and remaining cheese.

Bake for 15 minutes or until the edges of the tortillas are golden and the cheese is melted. Let it sit for a few minutes before cutting. When ready, cut with a pizza cutter and serve with sour cream, lettuce, avocados, etc.

Burritos are my go-to dish at any mexican restaurant…I’ve never made them before and will be sure to try out this yummy sounding recipe!
