Description

An easy vegetarian pasta dish for any night of the week.

Ingredients

  • 1 pound Pasta (your Preference)
  • ½ cups Reserved Pasta Water
  • 1 bag (6 Oz. Bag) Baby Spinach
  • 8 ounces, weight Block Of Mozzarella (Any Kind Will Work, But Fresh Is The Best)
  • 3 cloves Garlic
  • ¼ cups Olive Oil
  • 2 Tablespoons Parmesan Cheese, Divided

Preparation

1) Boil water for pasta and make sure to salt the water, too. Cook pasta al dente, as per package directions. (I like to undercook the pasta by one minute because it cooks more in the pan later on, but that’s optional.)
2) While pasta is cooking, chop garlic. You can also chop or tear the spinach, but that’s optional. Also, cut the mozzarella into bite-size pieces and put to the side.
3) Put the olive oil in a large pan on medium heat. Cook the garlic until just brown, and then add the spinach.
4) Let the spinach steam for about 5 mintutes.
5) When the pasta is ready, make sure to leave about 1/2 cup of the water for the sauce.
6) Add the pasta, mozzarella, and 1 tablespoon of parmesan to the spinach and garlic mixture. Add salt and pepper. Toss and add water if needed.
7) Top with remaining parmesan cheese. Enjoy!
