Description

This pot roast is so easy that you can prepare it in the morning before work, only to come home to a delicious dinner that will seem like you were slaving over the hot stove for hours!

Ingredients

  • 3-½ pounds Chuck Roast
  • 2 Tablespoons Salt And Pepper
  • 6 whole Russet Potatoes
  • 2 cups Baby Carrots
  • 2 whole Yellow Onions
  • 2 packages (1 Oz. Packet) French Onion Soup Mix
  • 1 cup Water

Preparation

Heat up a pan, big enough to hold the chuck roast, to medium/high. Season each side of the chuck roast with salt and pepper. Sear each side of the chuck roast for 2 minutes on each side.

Wash and peel the potatoes. Cut them into large cubes and put them in the bottom of your crock pot.

Wash the baby carrots. Place them on top of the potatoes.

Cut the onions into several large peices and place on top of the baby carrots.

Place the chuck roast on top of the potatoes, baby carrots and onions.

Now, mix together the French onion soup mix with the water. Pour all over the chuck roast and down in the sides of the crock pot.

Put the lid on the crock pot and cook on low for 8-9 hours or on high for 4-5 hours.

I’ve made this pot roast for years, and it is the best! Instead of cooking the potatoes with the roast, I usually make mashed potatoes on the side because the juice from this roast makes the most awesome gravy.
