Description

Do you love those restaurant quesadillas, but always thought they were to hard to make at home? Then this recipe is for you. Easy and quick, these are perfect for those nights when you’re rushed and need something you can throw together fast.

Ingredients

  • 3 whole Cooked And Shredded Chicken Breast Halves
  • ¼ cups Sour Cream
  • ½ cans (10.5 Oz. Can) Cream Of Chicken Soup
  • ¼ cups Salsa
  • 1-½ cup Shredded Colby And Monterey Jack Cheese
  • 8 whole Flour Tortillas

Preparation

Combine chicken, sour cream, soup and salsa in a bowl. Divide chicken mixture and cheese evenly among 4 tortillas. Cover with remaining tortillas. Heat one tortilla stack in a large skillet sprayed with cooking spray over medium heat for 2-3 minutes. Turn tortilla over and repeat for another 2-3 minutes or until cheese is melted. Repeat with the remaining tortilla stacks. Cut each one into 4 wedges and serve with additional salsa and sour cream.

Glad you liked the recipe and was able to adjust it to suit your families taste. It’s my go to recipe when I’m rushed and don’t have much time to prepare a meal for my family.

Made these last night and really liked them. Husband hates sour cream and daughter hates salsa so I didn’t add them, just used them for dipping. I also added a little salt and chile powder and a can of ortega chiles. Yum! Will absolutely make these a standard at our house.

The flavor was great, but I found the filling to be a bit too much for me. It was really creamy and there was a lot of it. If I were to make these again, I would halve the filling and double the cheese.
