Description

A hearty pizza that goes great with a salad. Can be delicious for breakfast with a side of fruit.

Ingredients

  • 1 whole Homemade Or Store-bought Pizza Dough
  • 2 cups Leftover Roasted/baked Potato, Chopped
  • 2 Tablespoons Olive Oil
  • 2 Tablespoons Dry Ranch Dressing/seasoning Mix
  • 2 Tablespoons Mayonnaise-Dijon Mustard Mix
  • 8 slices Provolone Cheese
  • 8 strips Crispy Cooked Bacon, Roughly Chopped
  • 1 cup Shredded Cheddar Cheese, Or More As Needed
  • ¼ cups Sliced Green Onions (about 3 Stalks), Optional
  • Salsa And Sour Cream, Optional

Preparation

Prepare homemade pizza dough or follow directions for store-bought pizza dough. (I usually bake my pizza dough BEFORE I put any ingredients on it. To the point where it is almost done.)

While dough is baking: mix chopped potatoes, olive oil and ranch dressing mix in a medium bowl. Set aside.

If desired, spread mayo-dijon mixture over the baked pizza crust.
Place provolone slices on next.
Spoon the potato mixture evenly over the provolone cheese.
Sprinkle with bacon and shredded cheddar cheese.
Bake until crust is golden and cheese is melted.
If desired, sprinkle with green onions and serve with a side of sour cream and salsa.

(This can also be cut up into small squares to serve as an appetizer.)
