Slow cooked Cajun chicken meal! This is a variation of another recipe I found here in Tasty Kitchen from member meganod. My recipe uses less tomatoes and Italian bread crumbs to thicken the sauce. Very delicious. Nice and spicy!
Spice warning: This recipe is pretty spicy. If you do not like food very spicy, you can use about half of the spicy ingredients.
Turn a medium sized slow cooker on low. Pour in beer, olive oil, and stewed tomatoes.
Mix all of the spices (except bay leaves) and the bread crumbs together in a shallow bowl. Rub the pieces of chicken/turkey in the seasonings and put chicken into the slow cooker. Add the bay leaves. Pour the leftover seasonings into the slow cooker. Stir to combine and put the lid on.
Cook on low for 4–6 hours. Stir occasionally to insure the tomatoes don’t stick to the side and bottom of the pot. In the last hour, cook your desired amount of white rice according to package instructions.
When done, remove the bay leaves. Serve the chicken and sauce over white rice. Enjoy!

After moving from Indiana a few years ago, I’ve been using this recipe to recreate my favorite dish from Yats. It’s so good! I have been eating more vegetarian meals lately and substituted 2 cans of jackfruit for the chicken, and it was delicious!

When you say “pour the leftover seasonings into the slow cooker,” do you mean the seasoning/bread crumb mixture?
