Divine Cranberry-Pecan Chicken Salad

Description

A slightly sweet (with a delicious tang from dried cranberries) chicken salad that is perfect in a sandwich or as an appetizer with dip-able crackers.

Ingredients

  • 2 cups Cooked Rotisserie Chicken, Chopped Or Shredded
  • ⅓ cups Dried Cranberries
  • ¼ cups Whole Pecans, Roughly Chopped
  • ½ cups Mayonnaise
  • 3 ounces, weight Plain Or Vanilla Yogurt
  • ¼ cups Sour Cream
  • ⅛ cups Brown Sugar (Please Note This Calls For ONE-EIGHTH Of A Cup, Not One-third!)
  • 3 dashes Lemon Juice
  • Salt And Pepper, to taste

Preparation

In a large mixing bowl, toss together chicken, cranberries and pecan pieces.

In a separate bowl, mix together the mayonnaise, yogurt and sour cream. Combine this wet mixture in with the chicken, berries and nuts. Fold in brown sugar, lemon juice and salt and pepper taste.

For best results, cover and place in the fridge for at least 1/2 hour so all the flavors can marry.

Serve on a croissant or with your favorite crackers!

This is fantastic! I used almost all Greek yogurt and maybe just a 1/4 cup mayo, left out the sour cream all together (because I didn’t have any!) and it was delicious! Wonderful recipe :)

I just want to clarify, because the number is a little hard to see, that the recipe calls for one-eighth a cup of brown sugar, not one-third. Of course, if you like things really sweet, go for the 1/3 of a cup! :)

Definitely divine! I agree that you could get away with less sugar. I went with the full amount for the first go-round, and it needed a lot more salt and pepper to balance. This is my new favorite chicken salad recipe, and I’ll definitely make it again!!! Too bad my hubby doesn’t like chicken salad…that leaves more for me!

very very good. I didn’t think I would like to much sweetness, so I used only 1/4 cup brown sugar, and it was great.
