Description

A tasty, unusual pork roast we usually shred and use as taco meat.

Ingredients

  • 3 pounds Boneless Pork Roast Or Pork Loin
  • 3 cloves Finely Chopped Garlic
  • 2 Tablespoons Olive Oil
  • 2 Tablespoons Lime Juice
  • 2 Tablespoons Agave Nectar (Honey Can Be Used As A Substitute)
  • 2 Tablespoons Fresh Parsley, Minced
  • 1 Tablespoon Paprika
  • 2 teaspoons Cumin, Ground
  • 1 teaspoon Salt
  • ½ teaspoons Black Pepper

Preparation

Mix all together except the pork.

Cut the pork loin into to 1 1/2 to 2 inch slices. Dip the pork into the sauce and make sure every piece is covered.

You may cover well, and refrigerate for 6 to 24 hours.

Put it into the crock pot and cook for 8-10 hours.

Take out of the pot and shred with a fork.

I cooked this for supper tonight using half of a pork tenderloin. Instead of marinating (I had just read the recipe and was in a hurry) I slowly poured the sauce over the top of my loin in the crock pot (I didn’t cut it either). Then I added 1/4c water because I didn’t think there’d be enough liquid.

It came out moist, tender, and flavorful. My only wish was that I had a working stove so I could have made wild rice to go with it.

I’ll be keeping this recipe and will make it again.

By the way, the pork is not in the ingredient list.. what size pork loin?

Doesn’t sound so ‘unusual'; sounds like a MUST try! You are on my menu for next week, yay! Good timing too, as my oven is broken!

I made this and didn’t take the time to marinate as several others had not and then turned it into a cubana sandwhich, it was AWESOME!

I made this tonight to use in Cuban Sandwiches and it rocked! I totally forgot to marinate the meat first and just threw everything in the crock pot and it still turned out great. I know it will be even more wonderful the next time I make it and remember to marinate it! :)
