Description

Crockpot Pasta Fagioli Soup – perfect for fall and winter! Makes a TON.

Ingredients

  • 1 pound Spicy Italian Sausage, Casings Removed
  • ½ pounds Bacon, Sliced Into 3/4 Inch Pieces
  • 4 stalks Celery, Chopped (about 2 Cups)
  • 4 whole Carrots, Peeled And Diced (about 2 Cups)
  • 1 whole Onion, Diced (about 2-3 Cups)
  • 1 can Diced Tomatoes (28 Ounces)
  • 1 can (15 Oz. Size) Tomato Sauce
  • 2 cans Cannellini Or Northern Beans (15.5 Ounces Each)
  • 5 cloves Garlic, Peeled And Grated
  • 1 teaspoon Salt
  • 2 teaspoons Garlic Powder
  • 1 teaspoon Dried Parsley
  • 1 teaspoon Dried Oregano
  • 1 teaspoon Dried Basil
  • ¼ teaspoons Crushed Red Pepper Flakes, Or More To Taste
  • 32 ounces, fluid Chicken Broth
  • 32 ounces, fluid Beef Broth
  • 10 ounces, weight Diatelli Pasta
  • Optional Garnish: Shredded Parmesan Cheese

Preparation

Spray a large (7 quart) crock pot with non-stick cooking spray.

In a large non-stick skillet, cook the sausage over medium high heat until browned (break apart using your spatula). Place cooked sausage into the crock pot. Add bacon to skillet and cook until extra crispy; add bacon and drippings into crock pot as well.

Next, add celery, carrots, onion, diced tomatoes, tomato sauce, cannellini beans, and garlic into the crock pot. Stir in seasonings (salt, garlic powder, parsley, oregano, basil, and crushed red pepper). Lastly, stir in chicken and beef broth. Cook on low for 4-6 hours.

At about 30 minutes before serving, add the pasta and allow it to cook in the crock pot. If you want a thick soup add the full 16 ounce box (that’s how we like ours!). If you want it more “soupy” just add half a box (8 ounces).

Top with some freshly grated parmesan cheese and serve with a nice crusty white bread for dunking. DELICIOUS!

NOTE: If you don’t like a little heat, use regular sweet Italian sausage and omit the red pepper flakes!

I tried this using 1 c. of dried quinoa instead of pasta. It made a wonderful hearty stew! (I can only fit 1 can of beans and 1-2 cups of broth in my crockpot.) This recipe is a keeper in my house. Thanks again!

Scrumptious! Like the previous commenter, my crockpot wasn’t big enough for the full quantity of this recipe. I filled it with everything except the liquids and pasta and then added broth right up to the lip. It’s my general preference to use less broth than most recipes call for because my husband likes the heartiest of hearty soups. We came home to a heavenly aroma in the house! I dumped the crockpot contents into a pot so I could add the pasta and simmer until cooked. So delicious! I’ve switched from regular Italian sausage to the poultry sausage available at Wegmans. It tastes just the same, but has fewer calories. Plus, they sell it in patties so there’s no need to squeeze raw meat out of the casing. Thanks for sharing this recipe!

This soup is delicious!!! I did not have a large enough crockpot, so I used an enamel coated cast iron dutch oven and made it stovetop. Would not change a thing.
