Description

Asian style ginger beef that cooks itself!

Ingredients

  • 1 pound Beef Sirloin Tips
  • 1 cup Beef Broth
  • 2 teaspoons Grated Fresh Ginger
  • 2 cloves Garlic, Crushed
  • 4 teaspoons Soy Sauce
  • 2 Tablespoons Mirin
  • 1 bunch Scallions
  • 1 can Sliced Water Chestnuts
  • 1 can Bamboo Shoots
  • 3 Tablespoons Cornstarch
  • 2 Tablespoons Water

Preparation

Slice beef into thin strips, about 1 1/2 inches long. Place in the crock pot along with broth, ginger, garlic, soy sauce and mirin.

Thinly slice the white-to-pale-green part of the scallions and add them to the pot. Chop the rest into 1-inch pieces and reserve.

Cook on low for 6 to 8 hours or on high for 3 to 4 hours.

Half an hour before serving, add the remaining scallions, water chestnuts, and bamboo shoots. Mix the cornstarch with water and stir into the pot. Cover and cook for half an hour.

Serve over rice and fresh steamed broccoli.

Just made this last night for dinner. Hubby loved it- thought it tasted like beef stew. I was disappointed that it wasn’t more flavorful. Couldn’t even taste the ginger- and I added double what the recipe called for. Didn’t have the mirin though- maybe that’s why?
