A delicious melding of flavors that are perfect for Fall!
In a small food processor, blend coffee, chipotle peppers, honey, lime juice, salt and pepper together.
Slice onion coarsely and place it in the bottom of a crockpot. Pour broth in the crockpot. Place short ribs on top of onions, then pour sauce over the short ribs. Cover and cook on low for 8-10 hours.
Skim the fat from the top of the sauce. Pull the meat out of the crockpot. Remove bones from meat and shred the meat.
Serve the meat and sauce with a side of mashed potatoes!
