Description

Our new favorite chicken.

Ingredients

  • 3 pounds Boneless, Skinless Chicken Breasts (or 6 Large Ones)
  • 1 Tablespoon Onion Powder
  • 1 teaspoon Garlic Powder
  • 1 Tablespoon Smoked Paprika
  • ½ teaspoons Salt
  • ½ teaspoons Pepper
  • 8 ounces, fluid Beer
  • 32 ounces, fluid Barbecue Sauce, Divided

Preparation

Season chicken with onion powder, garlic powder, paprika, salt and pepper. Add to crockpot, then add beer and 24 ounces of barbecue sauce. Cook on low for 8 hours, tossing once or twice if desired. After 8 hours, shred and add remaining barbecue sauce. Serve as desired. This will serve at least 8-10 people.

Notes:
1. I’ve found that “thinner” barbecue sauce works better (such as Bone Suckin’ Sauce) than thicker sauce (like Sweet Baby Ray’s). If you choose to use a thicker sauce, you may want to add a little more beer (or liquid) in order for the sauce not to burn and thicken on the edges of the pot. This is also the reason I don’t use my homemade barbecue sauce.
2. If you don’t want to use beer, you can try a ginger ale, chicken stock, or even water.
3. This makes a ton of chicken and I usually immediately freeze a container for later.

julezw20 – it depends because I always forget to thaw things when I need them! usually I thaw in the fridge, occasionally just let it sit on the counter but usually in the fridge. then yes, i reheat on the stovetop in a saucepan… adding a little liquid (like broth) if it seems dry!

I could shoot myself for leaving this out on the counter over night so now I can’t enjoy the leftovers! I made this with a winter ale and it was fabulous!

It was good, and probably will be better next time when I use 36 oz of bbq sauce instead of 24oz for the whole thing (laughs). Everyone really like this even the kids!

This was so good! It will be interesting to see how the flavor changes with different beers. I used a Bavarian Wheat style beer. I think next time I am going to try a pumpkin ale and see what happens. Thank you for sharing this recipe! This was so easy and flavorful, and made enough to freeze for later!
