Description

I’m always looking for new ways to eat fish!

Ingredients

  • 4 whole Tilapia Fillets
  • ½ teaspoons Salt
  • ½ teaspoons Pepper
  • 2 Tablespoons Olive Oil
  • 2 Tablespoons Honey
  • 2 Tablespoons Lime Juice
  • 1 teaspoon Lime Zest
  • 2 cloves Garlic, Crushed
  • ⅓ cups Flour, Seasoned With Salt, Pepper, And Lime Zest
  • 2 Tablespoons Olive Oil, For Frying
  • Honey And Lime Zest, For Additional Drizzles

Preparation

60 minutes before cooking, season tilapia fillets with salt and pepper then lay in a baking dish or into a large ziplock bag. In a bowl, combine olive oil, honey, lime juice and zest, and crushed garlic and whisk until combined. Pour over tilapia and let marinate for an hour. Add flour (plus a bit more salt, pepper, and lime zest) to a bowl and set aside.

Heat a cast iron skillet (or a non-stick skillet) over medium-high heat and add olive oil. Dredge each piece of tilapia through the flour until you have a very light coating. Making sure the pan is hot, add tilapia to the oil and cook until flaky and crispy on each side, about 3-4 minutes per side. Remove tilapia from pan and let drain on a paper towel for a few minutes. Serve with an additional drizzle of lime and honey. I also serve this with blueberry lime salsa, which can be found in my recipe box.

Makes 4 tilapia fillets.

I hate tilapia. I didn’t make the blueberry compote, but this was the best way I’ve ever had tilapia. I will certainly make this again!

Really yummy! I usually just grill tilapia but this was much better! Flavors all went well together!

This was fairly quick and easy, and the flavor was unusual. But for me, it was almost a little too sweet. Next time I think I’d cut back a little on the honey. I like the concept though.
