Description

Healthy chicken tenders with a crispy honey-ginger coating!

Ingredients

  • 2 cups Lowfat Buttermilk
  • ¼ cups Honey, Plus More For Drizzling
  • 2 Tablespoons Ground Ginger, Divided
  • 2 teaspoons Garlic Powder, Divided
  • 1 pound Boneless Chicken Tenders
  • 2 cups Panko Bread Crumbs
  • 1 teaspoon Seasoned Salt
  • ¼ cups Whole Wheat Flour

Preparation

Combine buttermilk, honey, 1 tablespoon ginger and 1 teaspoon garlic powder in a baking dish. Cut chicken tenders in half or thirds and add to the buttermilk. Marinate for 2 hours or overnight.

Preheat oven to 450F.

Combine panko, remaining ginger and garlic, seasoned salt, and flour in a large bowl. Coat chicken pieces in the panko mix, then lay on a wire rack sitting on a baking sheet. Continue with remaining chicken pieces. Spray each piece with cooking spray or olive oil.

Bake for 10 minutes, flip, coat again with cooking spray, and bake for another 10-15 minutes.

When finished, drizzle honey over the chicken pieces.

I made these for an office pot-lock, they were a HUGE hit! Very simple to make and quite delicious. I did not drizzle with honey either, just because I made a large amount and didn’t want them too messy. However, I thought they were sweet enough all by themselves. Great recipe! I will for sure make this again! Thank you for sharing! : )

ps. I did find my chicken stuck to the wire racks when I needed to flip, you might add spraying the racks with cooking spray to the prep, you don’t want any of that delicious breading getting lost. ; )

I made these & they are delicious. The only thing I didn’t do was drizzle with honey after baking. Thank you for sharing this recipe.

Love the honey drizzle. Will omit the salt from the breading though.

My boyfriend told me that this needs to be in my permanent rotation…and I completely agree. It was so hot out yesterday, I didn’t feel like putting together an elaborate meal – but this was perfect – while it marinated, I was able to get the sides ready – and everything just went in the oven together. Just in time for our show last night!

Thanks for the great recipe – hopefully next time I’ll be able to plan a little more ahead and let this marinate longer, but it was delicious with the 2 hours!

These were so yummy!! I didn’t have time to marinate and I also used regular flour and they were still moist and delicious!!! I got rave reviews from my family for the leftovers!! thanks for sharing!

This was really good! The best part was the honey drizzled on top. It wouldn’t have been the same without it. For sure.
