Description

This is a quick and easy pasta dish that features fresh vegetables in a creamy yet light sauce.

Ingredients

  • 8 ounces, weight Dry, Uncooked Pasta
  • 1 Tablespoon Olive Oil
  • 1 pound Swiss Chard Or Spinach, Cut Into Thin Strips
  • 2 cloves Garlic, Minced
  • ¼ cups Onion, Chopped
  • 2 whole Large Tomatoes, Chopped
  • ½ cups Sour Cream Or Plain Yogurt
  • ½ cups Milk
  • 1 dash Salt
  • 1 dash Pepper
  • ¼ cups Grated Parmesan Cheese

Preparation

Cook pasta according to package directions; drain.

Meanwhile, heat oil over medium-high heat. Add greens, garlic and onions and cook for about 2 minutes, or until greens begin to wilt. Stir in chopped tomatoes, sour cream, and milk. Add pasta and toss to coat. Season with salt and pepper. Transfer pasta mixture to a serving bowl and stir in the Parmesan cheese. Then, serve!

I wanted to like this but it was way too bland. I did however hide small pieces of swiss chard behind the noodles to get my 3 year old son to eat it.
