My mom makes the best mac-n-cheese. This is a close second to hers. At least, that is what my oldest son tells me. This recipe can easily be adapted to make cheeseburger mac by adding seasoned ground beef at the end.
Bring water to boil in a large saucepan. Add salt to taste. Add macaroni and stir to keep pasta from sticking together. When water begins to boil again, reduce heat to medium and cook pasta to al dente, approximately 8 minutes.
Drain most of the water from the pasta, leaving about 1 inch of water in the bottom of the pan. Return any pasta back to the original pan and place on the still-warm burner. (Remember to turn the burner off when you remove the pot to drain the pasta!)
Add diced cheeses and butter, stir until all the cheese is melted.
