A light pasta that is a great dish for beating the summer heat!
Cook pasta until al dente.
Cook minced shallot in olive oil until softened. Add flour to the pan and cook for a few seconds until incorporated. Stir in wine until flour in dissolved and wine simmers.
Stir in the cream, lemon juice, chopped chives and lemon zest. Season with salt and pepper.
Add drained pasta to the pan. Remove from heat and stir parmesan into the pasta.
Serve with a garnish of parmesan, lemon zest and chives.
