This is a great recipe if you are going be home for several hours before dinner but want a very simple recipe.
It only has six ingredients and takes so little time, but has deep rich tomato and mushroom flavor and a very nice creamy texture.
No soup mixes here, just real goodness!
Season the chicken breasts with chicken seasoning and salt, then brown over high heat in large skillet (you can use oil ) just to sear the outside of the chicken, not cook it, maybe 3–5 minutes total.
Place all the mushrooms over the chicken in the skillet. Then place all the tomatoes over the breasts, piling them up on top of the chicken as much as possible. Simmer for 3 hours.
Remove chicken to a serving dish, carefully trying to leave all the tomatoes on the breasts. Use a slotted spoon to get the rest of the solids out and place them over the chicken.
Simmer the sauce left, to reduce for 10 minutes, then add butter and cream until sauce smells wonderful.
Serve chicken with sauce poured over top. You can serve the chicken dish over rice or pasta or just by itself!
