This is my favorite Mac and Cheese recipe. I love just about anything with cream cheese.
1. Preheat oven to 400 degrees.
2. Bring a large pot of salted water to a boil. Add noodles and cook until al dente; drain.
3. In a saucepan melt butter and stir in flour. Cook for about 1 minute, until smooth and bubbly; stirring occasionally. Mix in milk, cream, cream cheese, salt, pepper, and Dijon mustard. Continue cooking until sauce is thickened. Add cooked macaroni and 3/4 cups of EACH cheese.
4. Pour into a 2-quart casserole dish. Top with remaining 1/4 cup of each cheese, adding more if needed. Bake for 15 to 20 minutes until heated through and cheese has browned.
