This was delicious! I only had about 4 oz of cream cheese and didn’t feel like running to the store so I mixed a can of evaporated milk and 4 oz of shredded sharp cheddar with the cream cheese. I also used elbow macaroni to make it easier for my kids to eat.

Okay. Our children weren’t crazy about it and would have preferred regular spaghetti to this. I did make a couple minor adjustments that may have made a difference because I thought we’d like it more. For my sauce, I always roast the tomatoes then crush them and make spaghetti sauce from that. Roasting the tomatoes brings out an amazing sweetness that seemed to overpower the creaminess in the noodles. I also used whole wheat pasta.

I was skeptical about this recipe because I couldn’t imagine using cream cheese with spaghetti, but I have to say “Oh my Oh my” This is like your Sunday Spaghetti dinner on steroids. The flavor, creaminess, with the sauce and meat. Oh my this is going to be one of our new family favorites. Thank you Jen for the recipe !!!!
