Description

Irish Coddle is perfect for St. Patrick’s Day. So easy too!

Ingredients

  • 1 Tablespoon Canola Oil
  • 6 slices Back Bacon, Cut Into 1/2" Strips
  • 3 whole Medium Onions, Sliced
  • 3 cloves Garlic, Minced
  • 6 whole Apple Chicken Sausage Links
  • 4 whole Medium Potatoes, Sliced Thinly With A Mandolin
  • 3 whole Carrots, Sliced Crinkle Cut
  • ½ teaspoons Ground Sage
  • 10 ounces, fluid Chicken Stock
  • Salt And Pepper, to taste
  • Parsley (optional Garnish)

Preparation

Preheat oven to 350 F. Heat the oil in a large frying pan over medium heat and fry the bacon for 2 minutes. Add the onion and continue to cook for 5-6 minutes, until golden brown. Add the garlic and cook an additional minute. Remove everything from the pan and set aside.

Add the chicken sausage into the pan and brown on both sides for 5-6 minutes. This will not be cooked through at this point.

Grease a large deep baking dish and add the thinly sliced potatoes, seasoning them with salt and pepper. Layer the carrots on top followed by the onion mixture. Sprinkle the onion with sage, salt and pepper. Place the sausage on top and pour the chicken stock over the top of everything. Cover the dish and cook in the oven for 1 hour. Sprinkle with parsley if desired. Serve and enjoy with bonnach or soda bread and a salad. Also goes great with a Guinness or red wine!!!

Oh my, the flavor of this dish is fabulous! It was easy to prepare and tasted fabulous! Only one problem….I cooked it for one hour (as directed) and the potatoes and carrots were still rock hard. I ended up having to cook the dish twice as long as the recipe called for. Next time, I will pre-cook the carrots & potatoes before putting them in the pan but there will be a next time because it was delish.
