Description

A healthy alternative to a beef burger with a kick from the chipotle peppers and a coolness from the avocado mayo.

Ingredients

  • FOR THE BURGERS:
  • 1 whole Chipotle Pepper In Adobo, Chopped
  • ¼ cups Onion, Chopped
  • ¼ cups Bell Pepper, Chopped
  • ½ teaspoons Dried Oregano
  • 1 clove Garlic, Minced
  • ½ cups Corn, Canned, Drained
  • 1 dash Salt
  • 1 dash Pepper
  • 1 pound Ground Lean Turkey
  • FOR ASSEMBLING THE BURGERS:
  • 5 whole Hamburger Buns
  • Toppings Of Choice, Such As Cheese, Tomato, Lettuce
  • FOR THE AVOCADO MAYONNAISE:
  • 1 whole Ripe Avocado
  • 1 Tablespoon Lemon Juice, Fresh
  • 1 clove Garlic, Mined
  • 1 Tablespoon Mayonnaise
  • 1 dash Salt To Taste
  • 2 pinches Pepper

Preparation

For the burger:
In a medium bowl, combine everything except the turkey until combined. Add in the turkey and mix until the seasoning mixture is evenly incorporated, but be careful not to overmix the meat. Divide the mixture into patties and chill in the fridge until ready to cook.

Heat a skillet on medium-high heat and spray with nonstick spray or a little vegetable oil. Once hot, add in the burgers and cook for 3-5 minutes on each side.

Serve on hamburger bun (or bread of choice) with a spoonful of the avocado mayo and toppings of choice like cheese, tomato, lettuce.

For the avocado mayonnaise:
Using a small food processor or by hand, puree the avocado, lemon juice, garlic, and mayo. Season with salt and pepper to taste. Pour into a small container and store in the fridge until ready to eat.
