Description

Toddler and adult friendly Chinese Chicken loaded with vegetables.

Ingredients

  • 1 package Chow Mein Noodles, 12 Ounce Package
  • 1 pound Chicken Breast Or Tenders (cut Up)
  • ¼ cups Soy Sauce
  • 2 Tablespoons Brown Sugar
  • 1 Tablespoon Hoisin Sauce
  • 1 Tablespoon Canola Oil
  • 1 teaspoon Sesame Oil
  • 3 cloves Garlic
  • 15 whole Shiitake Mushrooms (2 Handfulls)
  • 1 whole Red Bell Pepper
  • 2 cups Snow Peas
  • 1 can Baby Sweet Corn (15oz)
  • 2 whole Zucchini (could Be 1 Yellow, 1 Green)
  • 1 container Mung Bean Sprouts (5oz)
  • 4 whole Green Onions (scallions)

Preparation

Cook the chow mein noodles according to the package instructions.

Marinate the chicken in soy, brown sugar and hoisin mixture for 10 minutes.

Chop all the vegetables. Heat canola oil add the drained chicken (reserving the marinate), cook until brown, remove and set aside.

Add Sesame oil to the same pan, warm up, add garlic and cook for about 30 seconds. Then add mushrooms, bell pepper, peas and corn. Saute for 3 minutes or until soft. At this time add zucchini, bean sprouts and green onion cook for 1 minute. Add noodles, chicken and reserved marinate, toss and serve.

Sounds delish! Just be sure to cook the marinade (or make a separate, non-chicken-y batch) before tossing!

Yummy! Tasted just like take out and was easy to make at home. I didnt have Hoison sauce so I made some from a recipe on the web. I also substituted Shrimp for the chicken. Overall, great recipe, easy, yummy and something I will make again.
