Description

This is a super easy recipe that my mom made when I was growing up and my children love it now! They call it “Spinach Casserole!” It is an easy way to get spinach (the dreaded veggie by all kids) down them! Hope you enjoy it!

Ingredients

  • 10 ounces, weight Can Chunk White Chicken, Drained And Flaked
  • 10 ounces, weight Frozen, Chopped Spinach, Thawed And Drained Well
  • 1 cup Shredded Cheddar Cheese
  • ⅓ cups Mayonnaise (I Use Miracle Whip, NOT Light!)
  • ½ teaspoons Salt
  • ⅛ teaspoons Nutmeg (This Is A MUST!)
  • 2 packages (about 8 Oz. Package) Refrigerated Crescent Rolls

Preparation

Preheat oven to 375ºF.

Add all ingredients (except rolls) together. Mix well.

Separate crescent rolls and arrange in a circle with the wide ends overlapping in the center and pointed ends toward the outside (5-inch diameter in the center).

Scoop the chicken mixture evenly onto the widest end of each triangle. I use a melon ball scoop to do this, it makes it very easy. Bring the outside points of the triangles up over the filling and tuck under the wide ends. This does not have to be perfect. You will be able to see some filling between pieces of cresecent rolls.

Bake 20-25 minutes or until golden brown. This also makes a great appetizer!
