Description

Pasta with veggies: Come on in.

Ingredients

  • 2 cups Green Beans, Ends Trimmed And Cut Into 2-inch Slices
  • ½ pounds Spaghetti
  • 2 cups Broccoli Florets
  • 3 Tablespoons Extra Virgin Olive Oil, Divided
  • 1 pinch Coarse Salt
  • 1 pinch Freshly Ground Pepper
  • 1 pinch Garlic Salt
  • 1 whole Chicken Breast, Grilled And Sliced Thinly
  • Freshly Grated Parmesan Cheese For Garnish

Preparation

Bring a large pot of salted water to a boil. Toss in the green beans and cook 2 minutes. Remove with a slotted spoon and set aside.

Add the pasta to the water and cook until al dente. Reserve 1/4 cup pasta water and drain the rest.

Toss the broccoli florets with 1 tablespoon of oil and a good pinch of salt and pepper. Using a grill basket, grill 5 minutes, or until it pops green and is slightly charred.

Toss the pasta with the beans, broccoli, garlic salt and grilled chicken. Drizzle with remaining oil and pasta water.

Garnish with some freshly grated parmesan cheese and oh. dear.

I made this last night- one helpful hint- just throw the green beans in the last 2-3 minutes when the pasta is cooking instead of before and having to strain them out. I didn’t grill the broccoli- although that sounds delish- I was afraid my 6 year old wouldn’t eat it. I threw the broccoli in with the green beans for the last 3 minutes with the pasta. Turned out yummy and my daughter loved it too. We even plan to send the leftovers in her school lunch.
