This recipe makes very moist boneless, skinless chicken breasts, and cooks fast enough for stopping at the store after work and then making dinner! I didn’t have mozzarella cheese, so decided to try a Mexican version – and it was wonderful! I added chili powder, garlic powder and cumin to the bread crumbs. In a separate pan I sauted some onion, red bell pepper and mushrooms, added about 1/2 cup dry white wine, a small can of tomato paste & a 15 oz can of diced tomatoes with jalapenos. (I do want to try your recipe for tomato sauce next time!) Then I topped the chicken & tomato mix with cojita and sharp cheddar cheeses. Yumm! Hubby gave it the highest praise, “You can definitely make this again!”

Great recipe! I added some parm cheese to the bread crumb mixture as well. Served it over angel hair. Definitely making it again – this recipe is a keeper!

Tried this out last night as I had all the ingredients. Definitely a healthy alternative to chicken parmesan. Family liked it and will definitely make it again.

My husband and I loved this dish. I cooked the chicken a little longer than the recipe called for simply because my chicken was extra thick. I also served over spaghetti noodles. Delicious!

I wish i could rate it higher than just 5. Everything was so delicious! I highly recommend using organic ingredients it made everything just that much better!

Super easy recipe. I used thin turkey breasts, and dredged first in egg and then the bread crumbs.

I made this two nights ago with whole wheat pasta and it was awesome. Being that I made 5 breasts I had left overs for last night only I made them into chicken parm sandwiches on fresh rolls from the farmers market. I sliced the chicken so it would lay nicely on the roll , topped with more red gravy and mozzarella and put under the broiler. Yum, better than the hoagie shops in Philly. Thanks for the recipe.

Healthy-shmealthy…this tastes just as good as the non-healthy recipes! AND it’s easier! Even when you have to quadruple for a large family! Love it!!
