Description

This Chicken Parmesan is deceptively healthy. It’s lightly breaded, browned in a skillet for some color and then baked.

Ingredients

  • 2 whole Chicken Breast Halves, Boneless And Skinless
  • 1 Tablespoon Dried Oregano
  • 1 Tablespoon Dried Basil
  • 1 Tablespoon Dried Thyme
  • 2 teaspoons Kosher Salt
  • 1 teaspoon Ground Black Pepper
  • ½ cups Breadcrumbs
  • 2 Tablespoons Olive Oil
  • 2 cups Tomato Sauce
  • 2 Tablespoons Grated Parmesan
  • 4 ounces, weight Fresh Mozzarella, Thinly Sliced

Preparation

Preheat the oven to 500 degrees F.

Combine the herbs, salt, pepper and bread crumbs in a shallow dish to blend. Cover chicken breasts with mixture and shake off any excess.

Heat olive oil in large oven-proof skillet over medium-high heat. Add the chicken and cook just until brown, about 3 minutes per side. Remove the skillet from the heat.

Spoon the tomato sauce over and around the chicken. Sprinkle parmesan over each chicken breast. Cover each chicken breast with mozzarella slices.

Bake, covered with foil, for 10 minutes and then uncovered for 5 minutes, until the cheese melts and the chicken is cooked through.

Healthy-shmealthy…this tastes just as good as the non-healthy recipes! AND it’s easier! Even when you have to quadruple for a large family! Love it!!

This was last night’s dinner. I baked mine a little longer, too, because my chicken breasts were fairly large. Served over angel hair pasta, it was delicious!

LOVED IT!!! My parents are on this low carb kick, so I used parmesan cheese instead of bread crumbs. Yummm!
