Description

Not your McDonald’s chicken nuggets! Try them!

Ingredients

  • 2 cups Oil, For Frying
  • 2 whole Eggs
  • 2 Tablespoons Milk
  • 2 whole Sleeves Of Saltine Crackers, Crushed, 4 Ounce Sleeves
  • 4 whole Boneless Skinless Chicken Breasts, Cut Into Bite Size Pieces
  • 1 teaspoon Salt For Sprinkling

Preparation

In a Dutch oven, heat about 3 inches of cooking oil over medium heat.

With a fork, mix the eggs with the milk in a medium bowl. Put the crackers in another bowl, and the chicken in a bowl as well. Now you have a sort of assembly line going.

Dip each piece of chicken into the egg mixture, then roll in the crushed crackers until completely coated. Place the coated nuggets on a plate.

Fry the chicken pieces in the hot oil a couple of minutes on each side, until golden brown. Drain them on paper towels, immediately sprinkling them with salt. Repeat with the remaining chicken nuggets.

You can keep them warm in a 200F oven while you fry the rest of the nuggets.

Thanks so much! My mom used to use the saltines when she fried fish…I figured it would work for chicken. :)

This is an awesome recipe! My 4 kids loved loved loved these. And so did I, lots of flavor even without any kind of dipping sauce.
Very easy to prepare and cook. I used chicken tenderloins instead of breasts and just used kitchen shears to cut them into bite size peices. Then when the nuggets were keeping warm in the oven, I used the same oil to fry up some french fries and dinner was done!
