Description

BQQ-ish chicken smothered in cheese and bacon. Total kid and crowd-pleaser.

Ingredients

  • 2 cups BBQ Sauce, Your Favorite
  • ⅓ cups Mustard, Your Favorite, I Use Honey Mustard
  • ½ teaspoons Garlic Salt
  • ½ teaspoons Pepper
  • ⅓ cups Sherry Or Red Cooking Wine
  • 3 whole Chicken Breasts, Cut In Half Lengthwise To Make 6 Thin Breasts
  • 8 ounces, weight Mozzarella Cheese, Sliced
  • 4 ounces, weight Bacon, Cooked, More Or Less According To Taste
  • 2 whole Scallions, Chopped

Preparation

Mix BBQ sauce, mustard, wine, garlic salt, and pepper together. Add the wine and stir. Pour over chicken breasts in a 9×13 pan. Cook chicken in the sauce for about 20 minutes at 350ºF or until almost done. Place cheese over chicken and top with bacon strips. Bake for an additional 10 minutes, or until cheese is melted. Sprinkle with scallions.

Excellent over mashed potatoes, drizzled with extra sauce.

The sauce was a bit thick (I added a bit of water, but will add more next time). Other than that, it was quite tasty! Perfect served with mashed potatoes and a veggie.

Really yummy! Even the kids liked it…and it’s hard to get them to eat chicken that isn’t in the form of a nugget!
