Description

This burrito filling can be used to make tacos, enchiladas, and even taco salad.

Ingredients

  • 2 whole Boneless, Skinless Chicken Breast (frozen Is Fine)
  • 1 cup Salsa
  • 1 can Black Beans, Drained And Rinsed
  • 1 Tablespoon Chili Powder
  • 1 teaspoon Cumin
  • ½ teaspoons Black Pepper
  • ½ teaspoons Salt
  • ⅓ cups Water
  • 6 whole Burrito Sized Tortillas
  • 1-½ cup Cheese

Preparation

Place chicken breast in pan, pour 1/2 cup salsa over each breast. Cover and cook approximately 15 minutes or until cook through.

Remove from pan and chop into small pieces or shred with two forks.

Add chicken back to pan, add black beans, seasonings (to taste), and water.

Simmer for an additional 15-20 minutes.

Roll filling and cheese into tortillas.

Made this last night and husband and I both really enjoyed it! And it was so easy. I had never thought of seasoning the chicken with the salsa. But it was nice to create a good meal with such little effort! I think next time I make it (because I definitely will), I’m going to make some spanish rice to put in the tortilla too.

This was pretty quick and yummy!

I made some slight modifications:

1. Instead of pouring salsa over the chicken breasts as they cooked, I covered one side with fajita seasoning and let them cook. I added the salsa later, with the beans and seasoning.

2. I then added some fresh tomatoes and a dollop of sour cream to the burrito before I wrapped it.

It was an easy yummy recipe and I liked it better than Chipotle!
