Chicken Alfredo Pizza with Spinach and Red Onions: my favorite homemade pizza recipe!

Ingredients

  • FOR THE ALFREDO SAUCE:
  • ¼ cups Unsalted Butter
  • 4 ounces, weight (1/2 Package) Cream Cheese
  • 1 teaspoon Garlic Powder
  • 1 cup Milk
  • 3 ounces, weight Grated Parmesan Cheese
  • ¼ teaspoons Ground Black Pepper

  • FOR THE PIZZA ASSEMBLY:
  • 1 whole Pizza Crust (homemade Or Store Bought)
  • 1 Tablespoon Olive Oil
  • 1 whole Chicken Breast, Boneless And Skinless
  • ¼ teaspoons Dried Oregano
  • ¼ teaspoons Dried Thyme
  • ¼ teaspoons Dried Basil
  • 1 teaspoon Kosher Salt Plus Extra To Season Chicken
  • ½ teaspoons Ground Black Pepper Plus Extra To Season Chicken
  • 1 cup Baby Spinach Leaves, Whole
  • 1 whole Small Red Onion, Thinly Sliced
  • 6 ounces, weight Fresh Mozzarella Cheese, Thinly Sliced

Preparation

For the Alfredo Sauce:

Melt butter in a medium, non-stick saucepan over medium heat. Add cream cheese and garlic powder, stirring with wire whisk until smooth. Add milk, a little at a time, whisking to smooth out lumps. Stir in parmesan and pepper. Remove from heat when sauce reaches desired consistency. Sauce will thicken rapidly, thin with milk if cooked too long.

For the Pizza:

For the crust, you can use your own recipe or store bought or you can check out my pizza dough recipe by clicking on the related link.

Preheat your oven to 400 degrees.

Heat 1 Tablespoon olive oil in a non-stick skillet to medium-high heat. Sprinkle chicken breast generously with kosher salt and pepper. Cook chicken breast in skillet until no longer pink in the middle, about 8-10 minutes. Once cooked, allow to cool and then slice into bite-size pieces. Set aside for later.

Spread the alfredo sauce over the pizza dough, leaving about 1/2 inch around the outside edge for the crust. Sprinkle sauce with oregano, basil, thyme, salt and pepper.

Spread the baby spinach leaves evenly across the pizza. Arrange the onion slices and sliced chicken over the spinach. Top with mozzarella slices.

Place the pizza into the oven and bake for 8 to 10 minutes or until the crust edges are golden and the cheese is melted. After taking the pizza out of the oven, allow it to cool for a few minutes so that the cheese has time to set. Slice pizza and serve.

I used a store bought crust that just didn’t do the toppings justice! I will use a homemade crust next time…LOVE this recipe! YUM!!!!!!

Anyone who wants to make pizza at home should definitely give this recipe a whirl….you won’t be disappointed!

Really good pizza! I found myself craving some pineapple, something sweet to offset the salty. I loved having extra sauce for the leftover chicken!

This is a delicious new way to make home-made pizza. I used my usual recipe for pizza dough in my bread maker and made a 14″ pizza. We all loved it – plus the left-over pieces (and there were only 2!) were great for lunch the next day! The only thing I would change the next time I make it would be to halve (or at least reduce) the amount of alfredo sauce – I had too much to use for just one pizza dough, but I just saved it to make another pizza…SOON! Great recipe!

This was so great! The whole family loved it, which is really saying something. The alfredo sauce is amazing; I made extra bread sticks for dipping (had extra sauce because my pizza crust was small-ish). Bonus for me–I had left-over roasted chicken to use, so I didn’t have to cook chicken just to use on the pizza. Great recipe, sweet pea chef!
