Description

This was a bit of an experimental recipe that turned out pretty darn tasty.

Ingredients

  • 1 whole Bone-in Chicken Breast With Rib Meat
  • 1-¼ cup Rice
  • 2-½ cups Water
  • 4 Tablespoons Salted Butter
  • 4 Tablespoons Flour
  • 1-½ cup Milk
  • ½ pounds Monterey Jack Cheese (Freshly Shredded), Divided
  • 1 teaspoon Cumin
  • ½ teaspoons Sea Salt
  • 1 teaspoon Chili Powder
  • ¾ teaspoons Cayenne Pepper
  • 4 ounces, weight Fire Roasted Green Chilies

Preparation

Boil the chicken breast in water until fully cooked. Drain and put it on the cutting board to allow it to cool.

Combine the rice and water in a small saucepan, heat over medium heat. Allow it to cook until all the water is gone, then remove from heat and set aside.

Once you start the rice cooking, you can melt the butter in a medium sauce pan, then add the flour slowly, whisking the whole time to make a roux. Add in the milk and continue whisking. Allow it to cook about 3-5 minutes, until it becomes thick like a gravy. Add half the cheese, whisk until melted. Then add the seasonings and lastly the chilies.

Let that simmer for a few minutes while you roughly chop the chicken into bite sized pieces. Mix the chicken into the sauce and then mix in the rice. Pour into a casserole dish and top with the remaining half of the cheese.

Bake for 15 minutes covered at 350F, then remove the cover and bump the heat up to 400F. Cook another 10 minutes or until the cheese is golden brown and bubbly.

Trying this tonight….thankful for a casserole recipe that DOESN’T have cream of something soup!!

Looks delicious! I’m trying a variation of this tonight substituting the milk for cream of chicken soup. I think it’ll turn out well.

It was really good. I tried adding the salsa to it and cut back on the seasoning and it tasted good. Next time I’ll cut back on the cheese a bit and not cut back on the seasonings.

Great recipe, everyone loved it! Will make again. I added a cup of salsa for an added kick, left out the cayenne, turned out awesome!

LOVE this! Made it tonight and it is so so good. I am a very picky eater and could not get enough. I left out the cayenne so my kids could eat it and they had 3 large helpings. That is unheard of! It’s very cheesy, so you may want to cut that back a bit if you don’t like it too cheesy. Other than that, don’t change a thing! Thanks for posting. :)
