Description

A delicious pizza that incorporates the tang of green tomatoes with the sweetness of goat cheese and caramelized onions. Great as an entree or cut into smaller portions for an appetizer.

Ingredients

  • 1 box (about 8 Oz.) Herbed Focaccia Bread Mix, Such As Rosemary Or Italian Herb, Dough Mixed And Proofed As Directed (look In The Baking Aisle)
  • 2 whole Vidalia Or Other Sweet Onions, Caramelized (See Note)
  • 2 whole Green Tomatoes, Very Thinly Sliced (Use A Mandoline If Possible)
  • 4 ounces, weight Goat Cheese
  • 2 sprigs Thyme
  • 1 teaspoon Sugar
  • ½ teaspoons Salt
  • 1 Tablespoon Balsamic Vinegar
  • 6 Tablespoons Olive Oil, Divided (reserve 3 Tablespoons For Caramelized Onions)

Preparation

Heat oven to 400 degrees or as directed on focaccia mix.

After focaccia dough has finished rising, stretch to fit an oiled 9″ x 13″ glass baking dish; coat top of dough lightly with olive oil.

Spread caramelized onions evenly over pizza and layer tomatoes on top. Crumble goat cheese over tomatoes and sprinkle with thyme. Drizzle with olive oil and bake until dough is cooked through and golden brown, about 35-45 minutes. Slice into squares with a pizza cutter and serve.

Note: to caramelize onions, thinly slice the onions and add to a Dutch oven or large saute pan along with ½ teaspoon salt, 1 teaspoon sugar, and 3 tablespoons olive oil. Saute over low heat until browned and caramelized, about 45 minutes. Add 1 tablespoon balsamic vinegar and reduce until syrupy.
