Description

This delicious pizza is topped with caramelized onions and red peppers, creamy goat cheese and pepperoni.

Ingredients

  • 1 whole Pizza Crust Or Dough (Large Size, Store-bought Or Your Favorite Recipe)
  • 1 teaspoon Olive Oil
  • ½ whole Red Onion, Jullienned
  • ⅔ whole Red Bell Pepper, Jullienned
  • 1 pinch Salt
  • 1 teaspoon Butter, If Desired
  • 2 cups Pizza Sauce
  • 2 cups Shredded Cheese
  • 10 slices Pepperoni, Thinly Sliced, Or Desired Amount
  • 2 ounces, weight Goat Cheese Crumbled
  • 3 pinches Parsley For Garnish, If Desired

Preparation

1. Preheat oven according to directions for pizza crust/dough that you are using. Put pizza/dough crust onto your pizza pan or stone. Pre-cook crust if needed. Remove crust from oven when done.

2. Heat a pan over medium heat. Add olive oil, then add onions and red peppers. Season with a pinch of salt and then cook on medium heat for about 10-15 minutes until onions and peppers are brown and caramelized, stirring occasionally. When they are almost done, add the butter and cook for another 2 -3 minutes, if desired. Remove from heat.

3. Evenly spread tomato sauce onto crust and top with shredded cheese.

4. Evenly distribute caramelized onions and peppers and pepperoni over the top.

5. Top with crumbled goat cheese.

6. Cook pizza in the oven until crust is cooked through and cheese is melted, about 20 minutes depending on what type of crust you use, probably a little more if using dough.

7. Remove from oven, let it cool and then slice. Garnish with chopped parsley, if desired.

8. Enjoy!
