Quick, easy and tasty roasted chicken legs. Recipe adapted from the April 2012 issue of Cosmopolitan.
For the marinade:
1. Prepare chicken marinade by combining thyme, brown sugar, Worcestershire sauce, balsamic vinegar, soy sauce, ketchup, olive oil, salt and pepper in large bowl or plastic bag.
2. Coat chicken in marinade and allow chicken legs to marinate at least 1 hour.
To prepare the chicken:
1. Preheat oven to 400ºF.
2. Cut red onion into large wedges.
3. Place chicken, marinade, red onion and whole tomatoes into a roasting pan.
4. Cook in the oven for 40-45 minutes or until the chicken is cooked through (meat thermometer should read 165ºF when inserted into the chicken leg). The tomatoes should burst, the onions should be crispy around the edges and the chicken should be golden brown.
