Description

Creamy, spicy chicken pasta!

Ingredients

  • 3 whole Chicken Breast, Butterflied
  • 2 Tablespoons Cajun Seasoning, More For Spicier Pasta, Divided Use
  • 2 Tablespoons Olive Oil
  • ¾ pounds Spaghetti Or Linguine Pasta
  • ½ whole Onion, Sliced
  • 1 whole Red, Yellow Or Green Pepper, Sliced
  • 2 cloves Garlic, Minced
  • 1-½ cup Frozen Peas
  • 2 cups Half-and-Half (or Heavy Cream)
  • 1-½ cup Parmesan Cheese, Plus Additional For Topping

Preparation

Season chicken with 1/2 tablespoons of the Cajun seasoning. Drizzle olive oil into a medium frying pan, preheat on medium to medium high, add chicken and cook until no longer pink in the middle (depending on the size of the breasts, this will take 5 minutes per side or more). Take chicken out of the pan and set aside.

Cook the pasta until al dente (according to package instructions for al dente) while starting the veggies and pasta sauce. When pasta is done, drain it and set aside.

Add the sliced onion and pepper into the frying pan that you used for the chicken. Turn to medium high and cook for two minutes. Add minced garlic. Cook for three additional minutes stirring fairly constantly so the garlic doesn’t burn. Add the peas.

Add the half and half/cream, parmesan cheese and pasta. Remember to add the drippings from the chicken plate. Stir until everything is heated through and thickened some.

To serve, plate the pasta, place the chicken on top and sprinkle with additional parmesan cheese.

I love this recipe! It has been a while since I’ve had a creamy pasta and this satisfied my craving! Delicious flavor and so easy to make! I will be making this again for sure!
