Description

Super simple and yummy lunch idea!

Ingredients

  • 1 whole Rotisserie Chicken
  • 1 bottle (12 Oz. Size) Frank's Hot Buffalo Wing Sauce
  • 2 Tablespoons Butter
  • 1 whole Large White Onion, Sliced Into Rings
  • 2 teaspoons Sugar
  • 4 whole Individual 6-inch Pita/flat Breads
  • ½ cups Blue Cheese, Crumbled

Preparation

Pull chicken. Place into a pan on low heat. Pour and stir as much buffalo wing sauce as your spice taste-buds can handle. Let sit to warm thoroughly, stirring occasionally to keep from sticking and/or burning.

Heat butter in a large saute pan over medium heat. Saute onions until soft, about 12 minutes. Stir in sugar and continue to saute until onions are caramelized, or another 10 minutes or so. Set aside.

Microwave each pita for 15 seconds (do this to keep pitas from breaking). Assemble the sandwiches with the onions first. Cover caramelized onions with buffalo chicken. Sprinkle with blue cheese. Now you can add any other condiments you think to be fitting; I add spinach, but you could also add tomatoes, cheddar, really anything to help balance the heat of the buffalo sauce.

Carefully fold the pita in half and move to a panini grill. Grill for about 5 minutes or until the cheese is melted and the pita is toasted.

My husband loved this! I used tortillas since that’s what I had on hand. I didn’t even realize they sold buffalo sauce so when I found it I bought 2 bottles!
