Description

The best chicken meatballs ever, tossed in delicious wing sauce and served on fresh bread!

Ingredients

  • 1 pound Ground Chicken
  • 2 whole Carrots, Washed, Peeled And Finely Shredded
  • 2 stalks Celery, Washed And Finely Shredded
  • 2 cloves Garlic, Peeled And Finely Minced
  • 1 whole Egg
  • ⅓ cups Breadcrumbs
  • ¼ cups Milk
  • 1 teaspoon Salt
  • ½ teaspoons Pepper
  • 2 Tablespoons Butter
  • ½ cups Frank's Red Hot Sauce (or Your Favorite Buffalo Wing Sauce)
  • 6 whole Hoagie Rolls
  • Bleu Cheese, Ranch, Lettuce, Tomato, Or Other Favoite Sandwich Toppings

Preparation

Preheat oven to 400ºF. In a large bowl mix together the chicken, shredded carrots, chopped celery, minced garlic, egg, breadcrumbs, milk, salt and pepper.

Form into meatballs that are about 1-1/2 inches in diameter. Place the rolled meatballs on a baking sheet lined with parchment or sprayed liberally with cooking spray. Bake at 400ºF for 20 minutes.

Meanwhile, melt the butter and Frank’s Red Hot sauce in a large pan. When the meatballs are finished baking, toss them with the hot sauce mixture to coat. Let them sit in the sauce until ready to serve!

For a sub, cut a hoagie in half, scoop out a little bit of the interior bread, and add your favorite sandwich fixings. Top with meatballs. Devour.

I made these last night and they are FANTASTIC!!! I made the meatballs a little bigger so there were only 4 servings, and was amazed at how few calories was in a serving.

So very good! I think we’ll put in less carrot next time as we don’t love carrots but with the sauce you could hardly taste them. We will be making this again!
