Description

The delicious flavor of buffalo chicken in an easy to make casserole.

Ingredients

  • 2 whole Boneless Chicken Breasts
  • 2 cups Uncooked Pasta
  • 8 ounces, weight Cream Cheese Or Neufchatel Cheese
  • ½ cups Buffalo Wing Sauce
  • 1 cup Cheese, Your Choice

Preparation

Grill your chicken breasts (over medium heat on a grill, cooking for about 5 minutes per side or until no longer pink). When it’s done, remove from the grill and cut into bite sized strips or chunks, whichever you prefer, and set aside.

Cook your pasta according to package instructions and when it’s done, drain it and set aside as well.

In a medium to large sized saucepan, combine the cream cheese and buffalo sauce over medium heat until melted and well combined. Mix in the chicken and pasta until combined. Then transfer to an ovensafe dish. Top with the cheese of your choice, I use shredded cheddar but you could certainly use crumbled bleu cheese as well.

Heat in a 325 degree F oven for 15-20 minutes or until the casserole is bubbly and the cheese is melted. Enjoy!

I sauteed my cut up chicken and added 1 cup chopped celery and about 6 chopped scallions and let the veggies cook. I also substituted 1/2 of the neufchatel with Laughing Cow Blue Cheese wedges. It was better than I thought it would be but needs more sauce; or maybe less pasta!

This one it added to the monthly rotation. Super easy to prepare, especially if I would have had leftover chicken. I cooked my chicken in bite-sized pieces on then stove but other than that I followed the recipe exactly. Even my two 3-year-olds ate it, only saying it was a little spicy.
