Description

A pizza loaded with bacon and Brussels sprouts.

Ingredients

  • 1 whole Batch Of Pizza Crust Dough, Enough For A 12 Inch Size Pizza
  • 1 teaspoon Olive Oil
  • 10 whole Brussels Sprouts, Stems Removed Then Chopped
  • 6 ounces, weight Bacon, Chopped
  • 1 teaspoon Black Pepper
  • 1 teaspoon Salt
  • 2 Tablespoons Balsamic Vinegar
  • ¼ cups Mayonnaise
  • 2 cloves Garlic, Thinly Sliced
  • 4 ounces, weight Monterey Jack Cheese, Shredded
  • ½ cups Shredded Parmesan Cheese

Preparation

Preheat your oven to 350 F. Roll out the pizza dough to the size of your pan, put it on the pan, and bake the pizza crust for seven minutes. When done remove from oven and set aside. Keep the oven on.

In a skillet combine just a touch of olive oil, Brussels sprouts, bacon, black pepper and sea salt. Cook over medium heat until the Brussels sprouts are charred a bit and the bacon is crunchy. I used turkey bacon so I didn’t have to remove any excess grease or oil. If you are using regular bacon you will want to drain it now. Add the balsamic vinegar to the bacon and Brussels sprouts, mix to coat everything, remove from heat and set aside.

Take your pizza crust and spread a thin layer of mayonnaise across the top. Evenly distribute garlic slices over the mayo. Top with Monterey jack and Parmesan cheeses.

Finally add the bacon and Brussels sprouts mixture on top of the cheese layer. Return the pizza to the oven for 10-12 minutes until the cheeses are melted and your crust is nice and golden brown.
