This was absolutely delicious. At first I was afraid it wasn’t going to have enough flavor but ended up loving the crust it made when roasting. In fact the crust was my favorite part. It made a roasty glazed crust on the outside that was heaven. Sweet with a teensy bit of spice which was nice. Even my 7 year old who thinks everything is spicy loved this.
For the sauce/gravy afterwards I simply took my roast out and brought 1 3/4 C of water to a boil in my roast pan. And then mixed 2 Tbl of cornstarch with 1/4 of water and added it to the roast pan. With whisking and time my sauce thickened into a yummy smokey sauce that paired lovely with the sweet and spicy pork.

Delicious! Mine took another 30 minutes on a higher temp to cook all the way through. It’s tender and juicy and full of flavor. Thank you!

This was very good! With the leftovers, I shredded the pork, added some ketchup, more brown sugar and cajun seasoning, a little mustard and a splash of vinegar. This made it more like a barbequed pork. My husband and daughter loved this!

REALLY good, so juicy! Thank you so much for the recipe! I didn’t have cajun seasoning so just used mortons hot salt, it came out great!

Delicious! After browning, I tossed in carrots and potatoes to cook along with the roast, and then made gravy just as the first reviewer suggested (though mine needed some extra salt for flavor). Moist and such great flavors! Everyone in the family loved it

Wow- this was seriously amazing. Husband was worried about the brown sugar but I wanted LOTS of flavor so I doubled the cajun seasoning to 2 teaspoons and did 3 tablespoons of brown sugar. I then added the carrots and potatoes like Kristy suggested and even threw in some onions. Like someone else said, it did take a little longer to cook on higher temp (315 for an hour and then 350 for an extra 20 minutes) but OMG the flavor was amazing. I definately recommend adding some veggies and potatoes in with the roast because it is a SIN not to have something soak up that DELICIOUS juice!

Loved by my entire family – even the picky kids! I love the slightly spicey + sweet combination. And the roast was incredibly moist. Leftovers were divine!

I’ve made this several times for my family and it is always a hit! I never have Cajun seasoning on hand, so I make my own: 2 tsp. thyme, 1 1/2 tsp. kosher salt, 1 tsp. granulated garlic, 1 tsp. granulated onion, 1 tsp. paprika, 1 tsp. light brown sugar, 3/4 tsp. fresh ground black pepper and 1/4 tsp. ground cayenne pepper. Also, I let the brown sugar and Cajun rub soak into the roast for 15 minutes before browning. I make gravy just like the first reviewer did, but I use 2 Tbl. of flour instead of cornstarch. This is such a great recipe!!

We had this for dinner a week ago when my MIL was staying at our house. Everyone absolutely loved it. My husband is already wanting me to make it again. Thanks for sharing the recipe!

I made this last night for my family and it was a big hit! It has always been tough for me to get pork tender without it going dry. This was easy and created a tasty result!
